- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 can (14.5 ounces) of diced tomatoes, undrained
- 1 1/2 cups of chicken broth

Method
- Set your pressure cooker to sauté mode and add the olive oil.
- Once the oil is hot, add the onion and green pepper to the pot. Cook for 2-3 minutes until the vegetables soften.
- Add the garlic, cumin, smoked paprika, salt, and black pepper. Cook for an additional 30 seconds until the spices become fragrant.
- Stir in the rice, diced tomatoes, and chicken broth. Make sure to scrape the bottom of the pot to remove any brown bits.
- Close the pressure cooker lid and set the valve to sealing. Cook on high pressure for 10 minutes.
- Allow the pressure to release naturally for 10 minutes before opening the valve to release any remaining pressure.
- Fluff the rice with a fork and serve hot.
