Method

  1. Peel and slice the plantains into small pieces.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the plantain pieces to the skillet and fry until golden brown.
  4. Remove the plantain pieces from the skillet and place them in a mortar and pestle or potato masher.
  5. Add the pork cracklings and garlic to the plantains and mash until smooth.
  6. In the same skillet, add the shrimp and cook until pink.
  7. Remove the shrimp from the skillet and set aside.
  8. Add the white wine and chicken broth to the skillet and bring to a simmer.
  9. Add the butter and stir until melted.
  10. Return the shrimp to the skillet and stir to coat with the sauce.
  11. Season with salt and pepper to taste.
  12. On a plate, mold the plantain mixture into a ball and make an indentation in the center.
  13. Add the shrimp and sauce to the indentation in the plantain ball.
  14. Serve hot and enjoy!
