- 3 ripe plantains
- 1/4 cup of olive oil
- 1/4 cup of pork cracklings
- 2 cloves of garlic
- 1 pound of shrimp, peeled and deveined
- 1/4 cup of white wine
- 1/4 cup of chicken broth
- 1 tablespoon of butter
- Salt and pepper to taste

- Potato masher or mortar and pestle
- Cutting board
- Knife
- Measuring cups and spoons
Method
- Peel and slice the plantains into small pieces.
- In a large skillet, heat the olive oil over medium heat.
- Add the plantain pieces to the skillet and fry until golden brown.
- Remove the plantain pieces from the skillet and place them in a mortar and pestle or potato masher.
- Add the pork cracklings and garlic to the plantains and mash until smooth.
- In the same skillet, add the shrimp and cook until pink.
- Remove the shrimp from the skillet and set aside.
- Add the white wine and chicken broth to the skillet and bring to a simmer.
- Add the butter and stir until melted.
- Return the shrimp to the skillet and stir to coat with the sauce.
- Season with salt and pepper to taste.
- On a plate, mold the plantain mixture into a ball and make an indentation in the center.
- Add the shrimp and sauce to the indentation in the plantain ball.
