Ingredients

  • 1 lb. boneless, skinless chicken breasts, diced into small pieces
  • 1 small onion, diced
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 1 small jalapeno pepper, seeded and finely chopped
  • 2 cloves garlic, minced
  • 1 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped fresh cilantro
  • 1 package (14 oz.) refrigerated pie crusts
  • 1 egg, beaten with 1 tbsp. water

Equipment

Method

  1. Preheat oven to 375°F.
  2. In a large skillet, cook chicken over medium heat until no longer pink. Remove chicken from skillet and set aside.
  3. In the same skillet, sauté onion, red and green bell peppers, and jalapeno pepper until vegetables are tender.
  4. Add garlic, cumin, oregano, salt, and black pepper to the skillet. Stir until combined.
  5. Return chicken to the skillet and stir to combine chicken and vegetables.
  6. Add cilantro to the skillet and stir again until combined.
  7. Remove pie crusts from package and unroll onto a lightly floured surface.
  8. Using a 3-inch biscuit cutter or round cookie cutter, cut out circles from the pie crusts.
  9. Spoon about 1 tablespoon of the chicken mixture onto each circle of dough.
  10. Brush the edges of each circle with the egg wash.
  11. Fold the dough over the filling and press the edges together to seal.
  12. Place the empanadas onto a baking sheet and brush the tops with the egg wash.
  13. Bake for 20-25 minutes, or until the empanadas are golden brown.
  14. Remove from oven and let cool for a few minutes before serving.

Notes

These empanadas can be made ahead of time and frozen. To freeze, place the unbaked empanadas onto a baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe container or bag. When ready to bake, simply remove from freezer and bake as directed, adding a few extra minutes to the baking time.
