- 1 lb. boneless, skinless chicken breasts, diced into small pieces
- 1 small onion, diced
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- 1 small jalapeno pepper, seeded and finely chopped
- 2 cloves garlic, minced
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup chopped fresh cilantro
- 1 package (14 oz.) refrigerated pie crusts
- 1 egg, beaten with 1 tbsp. water
Equipment
- Large skillet
- Baking sheet
- Pastry brush
Method
- Preheat oven to 375°F.
- In a large skillet, cook chicken over medium heat until no longer pink. Remove chicken from skillet and set aside.
- In the same skillet, sauté onion, red and green bell peppers, and jalapeno pepper until vegetables are tender.
- Add garlic, cumin, oregano, salt, and black pepper to the skillet. Stir until combined.
- Return chicken to the skillet and stir to combine chicken and vegetables.
- Add cilantro to the skillet and stir again until combined.
- Remove pie crusts from package and unroll onto a lightly floured surface.
- Using a 3-inch biscuit cutter or round cookie cutter, cut out circles from the pie crusts.
- Spoon about 1 tablespoon of the chicken mixture onto each circle of dough.
- Brush the edges of each circle with the egg wash.
- Fold the dough over the filling and press the edges together to seal.
- Place the empanadas onto a baking sheet and brush the tops with the egg wash.
- Bake for 20-25 minutes, or until the empanadas are golden brown.
- Remove from oven and let cool for a few minutes before serving.
Notes
These empanadas can be made ahead of time and frozen. To freeze, place the unbaked empanadas onto a baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe container or bag.
