Ingredients

  • 1 cup cooked rice

  • 1/4 cup chopped coriander leaves

  • 1 tsp urad dal

  • 1/4 tsp asafoetida
  • 1 tbsp oil
  • Salt to taste

Method

  1. Take a bowl and add cooked rice, curd, milk, grated carrot, grated cucumber, chopped onion, pomegranate seeds, and chopped coriander leaves.
  2. Mix all the ingredients well and keep aside.
  3. Heat oil in a pan.
  4. Add mustard seeds and let them splutter.
  5. Add urad dal and chana dal and sauté until they turn golden brown.
  6. Add chopped green chillies and asafoetida and sauté for a few seconds.
  7. Add the tempering to the bowl containing the rice mixture and mix well.
  8. Add salt to taste and mix well.
  9. Let the curd rice rest for 5-10 minutes to absorb the flavors.
  10. Garnish with some chopped coriander leaves and serve.

Notes

  • You can also add some roasted peanuts or cashew nuts to the curd rice for extra crunch.
  • If you prefer a spicier version, you can add more green chillies or some red chilli powder to the tempering.
  • You can also add some grated coconut or raisins to the curd rice for a sweeter taste.
