Method
- Take a bowl and add cooked rice, curd, milk, grated carrot, grated cucumber, chopped onion, pomegranate seeds, and chopped coriander leaves.
- Mix all the ingredients well and keep aside.
- Heat oil in a pan.
- Add mustard seeds and let them splutter.
- Add urad dal and chana dal and sauté until they turn golden brown.
- Add chopped green chillies and asafoetida and sauté for a few seconds.
- Add the tempering to the bowl containing the rice mixture and mix well.
- Add salt to taste and mix well.
- Let the curd rice rest for 5-10 minutes to absorb the flavors.
- Garnish with some chopped coriander leaves and serve.

- You can also add some roasted peanuts or cashew nuts to the curd rice for extra crunch.
