- 1 cup of white rice
- 2 cups of water
- 1 can of sweetened condensed milk
- 2 cups of milk
- 1 tsp of vanilla extract
- 1 tsp of ground cinnamon
- A pinch of salt

- Measuring cups and spoons
- Spatula
- Bowl
Method
- Wash the rice thoroughly and drain the water.
- Add the rice, water, and a pinch of salt to the Instant Pot.
- Close the lid and set the valve to the sealing position.
- Press the “Manual” button and set the timer for 8 minutes on high pressure.
- Once the timer beeps, allow the pressure to release naturally for 5 minutes, then release the remaining pressure by turning the valve to the venting position.
- Open the lid and add the sweetened condensed milk, milk, vanilla extract, and ground cinnamon to the pot. Stir well.
- Press the “Saute” button and cook the mixture for 8-10 minutes, or until it thickens to your desired consistency.
- Turn off the Instant Pot and let the pudding cool for a few minutes.
- Transfer the pudding to a bowl and garnish with additional cinnamon, if desired.
- Refrigerate the pudding for at least 1 hour before serving.
Notes
- You can use any type of rice for this recipe, but white rice works best.
- Make sure to stir the pudding occasionally while it’s cooking to prevent it from sticking to the bottom of the pot.
- If the pudding is too thick, you can add more milk to thin it out.
