- 2 cups white rice
- 1 can coconut milk
- 2 cups water
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon allspice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 scotch bonnet pepper (optional)
- 2 tablespoons vegetable oil
- 2 green onions, chopped

Method
- Rinse the rice in cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onion, red bell pepper, and garlic and sauté until softened, about 5 minutes.
- Add the thyme, paprika, allspice, salt, and black pepper and stir to combine.
- Add the rice to the pot and stir to coat with the spices and vegetables.
- Add the coconut milk, water, and scotch bonnet pepper (if using) to the pot and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove the pot from the heat and let it sit, covered, for 5-10 minutes.
- Fluff the rice with a fork and stir in the chopped green onions.
- Serve hot and enjoy!
Notes
