- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 can cream of mushroom soup
- 1 cup frozen peas and carrots

- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1 cup shredded cheddar cheese

Method
- Preheat your oven to 375°F (190°C).
- Cut the chicken breasts into small pieces and season them with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 5-7 minutes. Transfer the chicken to a plate and set aside.
- In the same skillet, add the onion and garlic, and cook until softened, about 2-3 minutes.
- Add the rice, chicken broth, cream of mushroom soup, peas and carrots, thyme, salt, and pepper to the skillet. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 3-4 minutes.
- Add the cooked chicken to the skillet and stir to combine.
- Pour the mixture into a 9x13 inch baking dish and sprinkle the shredded cheddar cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and the rice is tender.
- Let the casserole cool for a few minutes before serving.
