Method
1. Rinse the rice under cold running water until the water runs clear. 2. In a large pot, combine the rice, milk, sugar, and salt. 3. If using a vanilla bean, split it in half lengthwise and scrape out the seeds. Add both the seeds and the pod to the pot. If using vanilla extract, add it to the pot. 4. Bring the mixture to a boil over medium heat, stirring occasionally. 5. Reduce the heat to low and cover the pot with a lid. Let the rice simmer for 45-50 minutes, stirring occasionally to prevent the rice from sticking to the bottom of the pot. 6. After 45-50 minutes, remove the pot from the heat and discard the vanilla bean pod if used. 7. Stir in the heavy cream, chopped almonds, and raisins. 8. Let the pudding cool slightly before serving. 9. Serve the pudding with cherry sauce on top.
Notes

- Be sure to rinse the rice before cooking to prevent it from becoming too starchy. - Stir the pudding occasionally while cooking to prevent the rice from sticking to the bottom of the pot. - If you don't have a vanilla bean, you can use vanilla extract instead. - You can adjust the sweetness of the pudding by adding more or less sugar to taste. - To make the cherry sauce, simply heat up cherry preserves or jam in a small saucepan over low heat until melted and pourable.
