- 2 lbs beef stew meat, cut into bite-sized pieces
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 garlic cloves, minced
- 1 can tomato sauce (8 oz)
- 1 can diced tomatoes (14.5 oz)
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 3 bay leaves
- 2 tbsp vegetable oil
- 2 cups water

- Dutch oven or large pot with lid
- Chopping knife and board

Method
- Heat up the vegetable oil in a Dutch oven or large pot over medium-high heat.
- Add the beef stew meat and cook until browned on all sides, stirring occasionally.
- Add the onion, green bell pepper, and garlic to the pot and cook until the vegetables are soft, about 5 minutes.
- Add the tomato sauce, diced tomatoes, tomato paste, cumin, oregano, salt, black pepper, and bay leaves to the pot and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer the carne guisada for about 2 hours, stirring occasionally and adding water as needed to keep the consistency of the stew.
- Remove the bay leaves from the pot before serving.
Notes
