Recipe Tips
- Use cold rice. If you have leftover rice in the fridge, use that instead of freshly cooked rice. Cold rice will fry up better and won't get mushy.
- Don't overcook the vegetables. You want them to be tender but still have some texture.
- Use a high smoke point oil. Olive oil is great for sautéing but for stir-fries, it's best to use an oil with a high smoke point such as vegetable oil or grapeseed oil.
- Make sure the pan is hot. You want to hear a sizzle when you add the rice to the pan. If the pan isn't hot enough, the rice will steam instead of fry.
