- 2 lbs of chicken thighs and drumsticks
- 1 tbsp of olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cups of potatoes, cubed
- 2 cups of carrots, sliced
- 1 can of tomato sauce (8 oz)
- 2 cups of chicken broth
- 1 tsp of cumin
- 1 tsp of oregano
- 1 tsp of smoked paprika
- 1 tsp of salt
- 1/2 tsp of black pepper
- 1 bay leaf
- 1 tbsp of fresh cilantro, chopped

Method
1. Heat olive oil in a large pot over medium-high heat. 2. Add chicken to the pot and cook until browned on all sides, approximately 5-7 minutes. 3. Remove chicken from the pot and set aside. 4. Add onion and garlic to the pot and cook until softened, approximately 3-5 minutes. 5. Add red and green bell peppers to the pot and cook for an additional 2-3 minutes. 6. Add potatoes, carrots, tomato sauce, chicken broth, cumin, oregano, smoked paprika, salt, black pepper, and bay leaf to the pot. 7. Stir everything together and bring to a boil. 8. Once boiling, reduce heat to low and let the stew simmer for approximately 1 hour, or until the chicken is fully cooked and the vegetables are tender. 9. Remove bay leaf from the stew. 10. Garnish with fresh cilantro before serving.Notes
