Ingredients
For the cake:
1 cup of all-purpose flour
1 teaspoon of baking powder
4 eggs
1/2 cup of sugar
1 teaspoon of vanilla extract
1/4 cup of milk
1/4 cup of vegetable oil
For the filling:
8 ounces of cream cheese
1/2 cup of sugar
1/2 teaspoon of vanilla extract
1/2 cup of guava paste, cut into small pieces
Equipment
Electric mixer
Medium-size bowl
9-inch baking pan
Parchment paper
Cutting board
Sharp knife
Method
1. Preheat the oven to 350°F. 2. In a medium-size bowl, sift the flour and baking powder together. 3. In another bowl, beat the eggs and sugar together until light and fluffy. 4. Add the vanilla extract, milk, and oil to the egg mixture and mix well. 5. Slowly add the flour mixture to the egg mixture and mix until well combined. 6. Line a 9-inch baking pan with parchment paper and pour the batter into the pan. 7. Bake for 20 to 25 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean. 8. Remove the cake from the oven and let it cool for a few minutes. 9. While the cake is cooling, prepare the filling. In a bowl, beat the cream cheese, sugar, and vanilla extract until smooth. 10. Once the cake has cooled, transfer it onto a cutting board and gently roll it up with the parchment paper. 11. Unroll the cake and spread the cream cheese mixture evenly over the cake. 12. Sprinkle the guava paste over the cream cheese mixture. 13. Roll the cake back up tightly and wrap it with plastic wrap. 14. Chill the cake in the refrigerator for at least 1 hour before serving.
Notes
Make sure to let the cake cool before rolling it up to avoid cracking.
If you don't have guava paste, you can substitute it with strawberry jam or any other fruit preserve of your choice. Make sure to cut the fruit preserve into small pieces before adding it to the filling. You can also add chopped nuts like walnuts or almonds for some crunch. Serve the pionono chilled for the best taste.
