Method

  1. Heat oil in a wok or a large frying pan over medium-high heat.
  2. Add the diced chicken and stir-fry for 5-6 minutes or until it turns golden brown. Remove it from the pan and keep it aside.
  3. In the same pan, add chopped onion, garlic, ginger paste, and green chilies, and saute for 2-3 minutes.
  4. Add diced carrot and capsicum, and stir-fry for another 2-3 minutes or until they turn slightly tender.
  5. Push the vegetables to one side of the pan and add beaten eggs to the other side. Scramble the eggs until they are cooked.
  6. Add cooked rice to the pan and mix everything well.
  7. Add soy sauce, vinegar, salt, and black pepper powder, and mix well.
  8. Add the cooked chicken to the pan and stir-fry for 2-3 minutes or until everything is well combined.
  9. Garnish with chopped coriander leaves and serve hot.
