- 2 tablespoons lemon juice

Method
- Wash the rice thoroughly and soak it in water for 20 minutes.
- Heat oil in a medium-sized pan and add mustard seeds.
- Once the mustard seeds start to splutter, add cumin seeds, turmeric powder, asafoetida powder, and slit green chillies.
- Saute for a few seconds and add the roasted peanuts.
- Add the drained rice and stir well.
- Add 2 cups of water and salt to taste.
- Bring the water to a boil and reduce the heat to low.
- Cover the pan with a tight-fitting lid and cook for 15 minutes or until the rice is fully cooked.
- Once the rice is cooked, turn off the heat and add lemon juice.
- Mix well and let it sit for 5 minutes before serving.
Notes
- You can use any type of rice, but Basmati rice works best for this recipe.
- You can adjust the amount of lemon juice and green chillies according to your taste.
- You can add some fresh coriander leaves for garnish.
