Cook Time

The cook time for this recipe is approximately 2 hours.

Ingredients

  • 2 pounds of goat meat
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons of curry powder
  • 1 tablespoon of thyme
  • 1 tablespoon of allspice
  • 1 scotch bonnet pepper, chopped
  • 2 cups of water
  • 1 can of coconut milk
  • Salt and pepper to taste
  • 1 tablespoon of vegetable oil
  • 1 cup of rice
  • 2 cups of water for rice

Equipment

  • Dutch oven or large pot
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Wooden spoon
  • Saucepan with lid

Method

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix together the goat meat, onions, garlic, curry powder, thyme, allspice, scotch bonnet pepper, and salt and pepper to taste. Cover and refrigerate for at least 30 minutes, or up to overnight.
  3. Heat the vegetable oil in the Dutch oven over medium-high heat. Add the goat meat mixture and cook until browned on all sides, stirring occasionally. Add 2 cups of water and bring to a boil.
  4. Reduce the heat to low, cover, and simmer for 1 1/2 to 2 hours, or until the goat meat is tender.
  5. Stir in the can of coconut milk and continue to simmer for an additional 10 minutes.
  6. Meanwhile, rinse the rice in cold water until the water runs clear. Add the rice and 2 cups of water to a saucepan and bring to a boil.
  7. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and the water is absorbed.
  8. Remove the goat meat from the Dutch oven and set aside. Increase the heat to high and let the sauce boil until it thickens, about 5-10 minutes.
  9. Serve the curry goat over the rice and enjoy!

Notes

  • If you cannot find goat meat, you can use lamb or beef instead.
  • Be careful when handling the scotch bonnet pepper, as it is very spicy. You can remove the seeds and membrane to reduce the heat.
  • For extra flavor, you can add chopped carrots and potatoes to the curry goat mixture.
