- 1 teaspoon dried oregano
- 1 teaspoon paprika

- 3 cups chicken broth
- 2 cups long grain rice
- Salt and black pepper, to taste
- Green onions, sliced, for garnish

Method
- In a large pot or Dutch oven, sauté the Andouille sausage until browned. Remove from pot and set aside.
- In the same pot, sauté the chicken until browned. Remove from pot and set aside.
- In the same pot, sauté the onion, green bell pepper, celery, and garlic until softened.
- Add the diced tomatoes, dried thyme, dried oregano, paprika, and cayenne pepper. Stir to combine.
- Add the chicken broth and bring to a boil.
- Add the rice, salt, and black pepper. Stir to combine.
- Reduce the heat to low and cover the pot. Simmer for 20 minutes.
- Add the Andouille sausage and chicken back to the pot. Stir to combine.
- Cover the pot and simmer for another 20 minutes or until the rice is cooked and the liquid is absorbed.
- Garnish with sliced green onions and serve.
Notes
