Ingredients

  • 1 pound Andouille sausage, sliced
  • 1 pound chicken, diced

  • 1 can diced tomatoes, drained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 3 cups chicken broth
  • 2 cups long grain rice
  • Salt and black pepper, to taste
  • Green onions, sliced, for garnish

Method

  1. In a large pot or Dutch oven, sauté the Andouille sausage until browned. Remove from pot and set aside.
  2. In the same pot, sauté the chicken until browned. Remove from pot and set aside.
  3. In the same pot, sauté the onion, green bell pepper, celery, and garlic until softened.
  4. Add the diced tomatoes, dried thyme, dried oregano, paprika, and cayenne pepper. Stir to combine.
  5. Add the chicken broth and bring to a boil.
  6. Add the rice, salt, and black pepper. Stir to combine.
  7. Reduce the heat to low and cover the pot. Simmer for 20 minutes.
  8. Add the Andouille sausage and chicken back to the pot. Stir to combine.
  9. Cover the pot and simmer for another 20 minutes or until the rice is cooked and the liquid is absorbed.
  10. Garnish with sliced green onions and serve.

Notes

This dish can be made with shrimp instead of chicken. Simply add the raw shrimp to the pot during the last 10 minutes of cooking.
