Description

Sticky rice balls, also known as glutinous rice balls or tang yuan, are a popular Chinese dessert. These sweet and chewy balls are made from glutinous rice flour and filled with sweet fillings such as black sesame, red bean paste, or peanut butter. They are typically served in a warm and sweet ginger syrup.

Prep Time

Preparing the dough and filling takes around 30 minutes. It is recommended to let the dough rest for at least 30 minutes before shaping the balls.

Cook Time

Cooking the rice balls takes around 5-7 minutes.

Ingredients

For the dough:
  • 2 cups glutinous rice flour
  • 3/4 cups warm water
  • 1 tablespoon sugar
  • 1 tablespoon vegetable oil
For the filling:
  • 1/2 cup black sesame seeds, toasted and ground
  • 1/2 cup sugar
  • 3 tablespoons vegetable oil
For the ginger syrup:
  • 4 cups water
  • 1 cup brown sugar
  • 2-inch ginger, sliced

Equipment

  • Mixing bowl
  • Steamer
  • Saucepan

Method

1. In a mixing bowl, combine glutinous rice flour, sugar, and vegetable oil. Slowly add warm water while mixing until a smooth dough is formed. 2. Cover the bowl with a damp cloth and let the dough rest for at least 30 minutes. 3. In a separate bowl, mix together black sesame seeds, sugar, and vegetable oil to make the filling. 4. Roll the dough into small balls, about the size of a marble. 5. Flatten each ball and place a small amount of filling in the center. 6. Gently pinch the edges together and roll into a ball shape. 7. Steam the rice balls for 5-7 minutes. 8. In a saucepan, combine water, brown sugar, and ginger. Bring to a boil and let simmer for 5 minutes. 9. Serve the rice balls in a bowl of ginger syrup.

Notes

  • Be sure to use glutinous rice flour for this recipe. Regular rice flour will not work.
  • If the dough is too dry, add a little more warm water. If it is too sticky, add a little more glutinous rice flour.
  • The filling can be made with a variety of sweet fillings such as red bean paste, peanut butter, or even chocolate.

Recipe Tips

  • Make sure the filling is not too wet or it will make the dough sticky and difficult to shape.
  • Use a steamer to cook the rice balls. Do not boil them in water as they may fall apart.
  • Leftover rice balls can be stored in the refrigerator for up to 3 days. Reheat them in the ginger syrup before serving.
