- 1 lb. ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 garlic cloves, minced
- 1 tbsp. tomato paste
- 1 tsp. dried oregano
- 1 tsp. ground cumin
- 1 tsp. smoked paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup chopped fresh cilantro
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg, beaten

- Large skillet
- Parchment paper
- Baking sheet
- Rolling pin
- Pastry brush
Method
- Preheat your oven to 375°F.
- In a large skillet, cook the ground beef over medium-high heat until browned.
- Add the onion, green pepper, garlic, tomato paste, oregano, cumin, paprika, salt, and black pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Remove the skillet from the heat and stir in the chopped cilantro.
- Unroll the pie crusts on a lightly floured surface and cut each crust into 4 circles using a 4-inch cookie cutter.
- Place a heaping tablespoon of the beef mixture in the center of each circle.
- Brush the edges of the circles with the beaten egg.
- Fold the circles in half and press the edges to seal.
- Place the empanadas on a parchment-lined baking sheet and brush the tops with the remaining beaten egg.
- Bake for 25-30 minutes, or until the empanadas are golden brown.
- Serve hot and enjoy!
Notes
If you don't have a 4-inch cookie cutter, you can use a small bowl or cup to cut the circles. You can also make the empanadas ahead of time and freeze them for later.
