  • 1 lemon, juiced
  • Salt to taste

Method

Here's how to make lemon rice:
  1. Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, chana dal, asafoetida and peanuts. Fry until peanuts turn golden brown.
  2. Add grated ginger, green chilies, curry leaves and turmeric powder. Fry for a few seconds.
  3. Now add cooked rice and mix well.
  4. Add lemon juice and salt to taste. Mix well.
  5. Switch off the flame and cover the pan with a lid for 5 minutes to allow the flavors to blend together.
  6. After 5 minutes, remove the lid and give it a good mix.
  7. Your lemon rice is ready to be served!

Notes

If you don't have cooked rice, you can cook 1 cup of rice in 2 cups of water and then use it to make this dish. You can add more peanuts or cashews to give it a crunchy texture.
