Description

Filipino fried rice, also known as "sinangag," is a popular breakfast dish in the Philippines. It is a simple yet flavorful dish made with leftover rice, garlic, and soy sauce. It is usually served with fried eggs and a side of meat such as tocino, longganisa, or corned beef.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 4 cups cooked rice, preferably leftover and chilled
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1/4 teaspoon black pepper
  • Green onions, sliced (optional)

Equipment:

  • Large skillet or wok
  • Wooden spoon or spatula
  • Bowl

Method:

  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds, or until fragrant.
  3. Add the cooked rice and soy sauce to the skillet and stir to combine.
  4. Sauté the rice for about 5-7 minutes, stirring occasionally, until the rice is heated through and slightly crispy.
  5. Add black pepper and sliced green onions (optional) and stir to combine.
  6. Remove from heat and transfer the fried rice to a bowl.
  7. Serve hot with fried eggs and your choice of meat.

Notes:

  • Leftover rice works best for this recipe because it is drier and less sticky. If you don't have leftover rice, cook fresh rice and chill it in the refrigerator for a few hours before making the fried rice.
  • You can add other ingredients to the fried rice such as diced carrots, peas, or scrambled eggs.
  • For a healthier version, use brown rice instead of white rice.

Recipe Tips:

  • Use a wooden spoon or spatula to avoid scratching your skillet or wok.
  • Make sure your cooked rice is chilled and not too moist, or it will clump together and not crisp up properly.
  • Adjust the amount of soy sauce to your liking.
  • Feel free to experiment with other seasonings such as oyster sauce or fish sauce.
  • Top your fried rice with a fried or poached egg for extra flavor and protein.

Enjoy your Filipino fried rice for breakfast, lunch, or dinner!
