Ingredients

The ingredients you will need to make Mango Sticky Rice are:
  • 1 cup of glutinous rice
  • 1 can of coconut milk
  • 1/2 cup of sugar
  • 1/2 teaspoon of salt
  • 2 ripe mangos

Equipment

To make this recipe, you will need:
  • A medium-sized pot
  • A steamer basket or a colander
  • A mixing bowl
  • A wooden spoon or spatula
  • A knife and cutting board

Method

Here's how to make Mango Sticky Rice:
  1. Rinse the glutinous rice in cold water until the water runs clear. Soak the rice in water for at least 30 minutes before cooking.
  2. In a medium-sized pot, bring 1 1/2 cups of water to a boil. Add the rinsed and soaked rice, reduce the heat to low and cover the pot. Cook the rice for 15-20 minutes or until the water is fully absorbed and the rice is tender.
  3. In a separate mixing bowl, combine the coconut milk, sugar and salt. Mix until the sugar is fully dissolved.
  4. Add the cooked rice to the mixing bowl with the coconut milk mixture. Mix well until the rice is fully coated with the mixture.
  5. Cut the mangos into small cubes or thin slices.
  6. Place the rice and coconut mixture in a serving dish. Top with the sliced mangoes.
  7. Allow the dish to cool for 5-10 minutes before serving.

Notes

If you don't have a steamer basket or colander, you can still cook the rice by boiling it in a pot of water. Just be sure to stir the rice frequently to prevent it from sticking to the bottom of the pot.

Just be sure to drain the excess liquid before adding it to the dish. This dish is best served warm or at room temperature. If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days.
