Method

  7. Add the cooked sausage back to the pot and simmer for an additional 10 minutes.
  8. Season with salt and pepper to taste.
  9. Remove the bay leaves and serve the red beans and sausage over cooked white rice.

Notes

  • If you don't have time to soak the beans overnight, you can use the quick soak method. Simply put the beans in a pot, cover with water, and bring to a boil. Boil for 2 minutes, then remove from heat and let soak for 1 hour.
  • You can use any type of smoked sausage you prefer, such as andouille or kielbasa.
