- 2 cups of long-grain rice
- 1 teaspoon of saffron threads
- 4 cups of chicken broth

- 1/2 teaspoon of cumin
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of chopped parsley

Method
- Begin by rinsing the rice under cold water until the water runs clear. Drain the rice and set aside.
- In a small bowl, combine the saffron threads with 2 tablespoons of hot water and let it steep for 5 minutes.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onions and garlic and sauté for 2-3 minutes or until the onions are soft and translucent.
- Add the paprika, cumin, salt, and black pepper to the pot and stir well to combine.
- Add the rinsed rice to the pot and stir until the rice is coated with the onion and spice mixture.
- Pour in the chicken broth and saffron water and stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid. Let the rice simmer for 20-25 minutes or until all the liquid has been absorbed and the rice is tender.
- Once the rice is cooked, remove the pot from the heat and let it sit for 5 minutes. Then, fluff the rice with a fork and stir in the chopped parsley.
- Transfer the yellow rice to a serving dish and garnish with additional parsley if desired.
