Ingredients

  • 1 large onion, chopped
  • 3 large tomatoes, chopped
  • 3 bell peppers, chopped
  • 1 Scotch bonnet pepper, chopped
  • 1 tablespoon of tomato paste
  • 2 teaspoons of garlic powder
  • 2 teaspoons of ginger powder
  • 2 teaspoons of smoked paprika
  • 2 teaspoons of curry powder
  • 2 teaspoons of thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • 1/2 cup of vegetable oil
  • 4 cups of water or chicken broth

Equipment

  • A large pot with a lid
  • A wooden spoon
  • A food processor or blender

Method

  1. Wash the rice thoroughly and set it aside to drain.
  2. In a food processor or blender, blend the chopped onions, tomatoes, bell peppers, and Scotch bonnet pepper until smooth.
  3. Heat the vegetable oil in a large pot over medium heat. Add the blended mixture and tomato paste to the pot and cook for 10-15 minutes, stirring frequently, until the mixture has reduced and thickened.
  4. Add the garlic powder, ginger powder, smoked paprika, curry powder, thyme, salt, and ground black pepper to the pot and stir until well combined.
  5. Add the rice to the pot and stir until the grains are well coated with the sauce.
  6. Add the water or chicken broth to the pot and stir well. Cover the pot with a lid and cook on low heat for 30-35 minutes, or until the rice is cooked and the liquid has been absorbed.
  7. Turn off the heat and let the rice sit for 5-10 minutes before fluffing it with a fork.
  8. Your jollof rice is now ready to be served!

Notes

  • You can add chicken, beef, or shrimp to the jollof rice for added protein.
  • If you prefer a spicier jollof rice, you can add more Scotch bonnet pepper or use a hotter pepper.
  • Leftover jollof rice can be stored in the refrigerator for up to 3 days.
