Description

Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 2 tsp. salt
  • 1 tsp. cinnamon

  • 1/2 tsp. cardamom
  • 1/2 tsp. black pepper
  • 1/2 cup slivered almonds
  • 1/2 cup chopped pistachios
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots, chopped
  • 1/2 cup pomegranate seeds
  • 1/4 cup butter or ghee

Method

  1. Rinse the rice in a fine mesh strainer and soak in water for at least 30 minutes.
  2. In a large pot, bring 4 cups of water to a boil and add 2 teaspoons of salt.
  3. Add the soaked rice to the boiling water and stir well. Reduce heat to low and cover the pot with a lid. Cook for about 15-20 minutes or until the rice is tender and the water has been absorbed.
  4. While the rice is cooking, prepare the spice mix by combining cinnamon, cumin, turmeric, cardamom, and black pepper in a small bowl.
  5. Heat a skillet or pan over medium heat and add the slivered almonds, chopped pistachios, and chopped walnuts. Toast the nuts until they are lightly golden and fragrant, stirring frequently to prevent burning.
  6. Add the raisins, dried cranberries, and chopped apricots to the skillet and cook for a few minutes until they are softened.
  7. Stir in the spice mix and cook for another minute, stirring constantly to prevent burning.
  8. Once the rice is cooked, remove it from heat and add the nut and fruit mixture to the pot. Stir well to combine.
  9. Melt the butter or ghee in a small pan and pour it over the rice. Stir gently to combine.
  10. Serve the jeweled rice hot, garnished with pomegranate seeds, and enjoy!

Jeweled rice can be served as a side dish or as a main course, accompanied by grilled chicken or lamb. You can also add other dried fruits and nuts to the dish, such as chopped dates, dried figs, or cashews.
