- 2 boneless, skinless chicken breasts

- 2 cups water
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/2 cup BBQ sauce
- 2 tablespoons olive oil
- Salt and pepper, to taste

Method
- Cook the rice according to the package instructions.
- While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and season with salt and pepper. Cook for 5-6 minutes on each side, or until cooked through.
- Remove the chicken from the skillet and set aside.
