- 1 cup Basmati Rice
- 1 cup Coconut Milk
- 2 tablespoons Oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Cumin Seeds
- 1 teaspoon Urad Dal
- 1 teaspoon Chana Dal
- 1/4 cup Roasted Peanuts
- 1/4 cup Roasted Coconut
- 2 Green Chillies, slit
- 1 small Onion, chopped
- 1 tablespoon Ginger-Garlic Paste
- A pinch of Turmeric Powder
- Salt to taste
- Coriander Leaves for garnish

- A Knife and Chopping Board
Method
- Wash the rice and soak it in water for 30 minutes.
- Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, and chana dal. Let them splutter.
- Add roasted peanuts, roasted coconut, green chillies, chopped onions, and ginger-garlic paste. Saute till onions turn golden brown.
- Drain the water from the soaked rice and add it to the pan. Saute for 2-3 minutes.
- Add coconut milk, turmeric powder, and salt. Mix well.
- Add 2 cups of water and bring it to a boil.
- Cover the pan with a lid and let it cook on low flame till the rice is cooked and all the water is absorbed. It will take around 15-20 minutes.
- Garnish with coriander leaves and serve hot with any spicy curry or raita.
Notes
- If you don't have roasted peanuts and roasted coconut, you can roast them in a pan or in an oven.
- You can adjust the quantity of green chillies according to your taste.
- You can use any variety of rice, but basmati rice gives the best taste and aroma.
