- 4 large bell peppers
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 can diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated parmesan cheese

Method
- Preheat the oven to 375°F.
- Bring a large pot of salted water to a boil. Cut the tops off the peppers and remove the seeds and membranes. Blanch the peppers in the boiling water for 3-4 minutes, then drain and set aside.
- In a frying pan, cook the ground beef over medium heat until browned. Add the onion and garlic and cook for 2-3 minutes until softened.
- Add the zucchini and mushrooms to the pan and cook for 4-5 minutes until softened.
- Add the canned tomatoes, tomato paste, oregano, basil, salt, and pepper to the pan. Simmer for 5-10 minutes until the sauce has thickened.
- Fill the peppers with the beef and vegetable mixture and place in a baking dish. Sprinkle with parmesan cheese.
- Bake in the preheated oven for 30-35 minutes until the peppers are tender and the cheese is melted and golden brown.
