Soak the beans overnight, then drain and rinse. 2. In a large pot, sauté the onion, bell pepper, and garlic until softened. 3. Add the sausage and cook until browned. 4. Add the beans, bay leaves, Cajun seasoning, and enough water to cover everything by an inch. 5. Bring to a boil, then reduce heat and simmer for 2-3 hours, until the beans are tender. 6. Serve over cooked white rice.

Cajun Dirty Rice

Ingredients: - 1 pound ground beef - 1 onion, chopped - 1 green bell pepper, chopped - 3 cloves garlic, minced - 2 cups cooked white rice - 1 tablespoon Cajun seasoning - Salt and pepper to taste Method: 1. Cook the ground beef in a skillet until browned, then remove and set aside. 2. In the same skillet, sauté the onion, bell pepper, and garlic until softened. 3. Add the cooked rice, Cajun seasoning, and salt and pepper to taste. 4. Stir in the cooked ground beef and serve.

Chicken and Sausage Jambalaya

Ingredients: - 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces - 1 pound smoked sausage, sliced - 1 onion, chopped - 1 green bell pepper, chopped - 3 cloves garlic, minced - 2 cups uncooked white rice - 4 cups chicken broth - 1 tablespoon Cajun seasoning - Salt and pepper to taste Method: 1. In a Dutch oven, sauté the chicken and sausage until browned, then remove and set aside. 2. In the same Dutch oven, sauté the onion, bell pepper, and garlic until softened. 3. Add the uncooked rice and stir to coat with the vegetables. 4. Add the chicken broth, Cajun seasoning, and salt and pepper to taste. 5. Return the chicken and sausage to the pot and bring to a boil. 6. Reduce heat and simmer for 20-25 minutes, until rice is tender and liquid is absorbed.
