- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup vegetable shortening
- 1/2 cup cold water

Method
- In a large mixing bowl, combine the flour and salt.
- Add the vegetable shortening and use your fingers to mix it into the flour mixture until it resembles coarse sand.
- Add the cold water and mix until a dough forms.
- Turn the dough out onto a floured surface and knead for a few minutes until it becomes smooth and elastic.
- Divide the dough into 12 equal pieces and roll each piece into a ball.
- Using a rolling pin, roll out each ball of dough into a circle about 6 inches in diameter.
- Place a spoonful of your desired filling onto one half of the dough circle.
- Fold the other half of the dough over the filling and use a fork to crimp the edges of the empanada closed.
- Repeat with the remaining balls of dough and filling.
- Place the empanadas onto a baking sheet lined with parchment paper and bake in a preheated 375°F oven for 25 minutes or until golden brown.
Notes
If the dough is too dry, add a tablespoon of water at a time until it comes together. If the dough is too wet, add a tablespoon of flour at a time until it is the right consistency.
