Method

The following are the steps to make Hokkien alkaline rice cake:

  7. Remove the steamer from heat and let it cool for 5 minutes.
  8. Remove the rice cakes from the moulds and place them on a plate.
  9. Repeat the process until all the batter is used up.

Notes

  • Alkaline water is also known as lye water or kan sui. It can be found in Asian grocery stores.
  • The red food coloring is optional and can be omitted if desired.
  • The cornstarch is used to prevent the rice cakes from sticking to the moulds.
