Ingredients

2 cups brown rice
3 cups water

1 avocado, sliced
1 cucumber, sliced
1 carrot, julienned
1 bell pepper, sliced
1/4 cup soy sauce
1 tablespoon wasabi paste

Method
1. Rinse the brown rice in a fine mesh strainer and add it to a large pot with 3 cups of water. Bring to a boil, then reduce the heat to low and cover with a lid. Cook for 35-40 minutes, or until the rice is tender and the water has been absorbed. 2. While the rice is cooking, prepare the vegetables by slicing the cucumber, bell pepper, and avocado, and julienning the carrot. 3. In a small bowl, combine the rice vinegar, sugar, and salt. Microwave for 30 seconds, or until the sugar has dissolved. 4. Once the rice is cooked, transfer it to a large bowl and pour the vinegar mixture over it. Stir gently to combine. 5. Lay a sheet of nori seaweed on the sushi mat, shiny side down. Spread a layer of rice over the nori, leaving a 1-inch border at the top. 6. Add the vegetables in a row on top of the rice. 7. Use the sushi mat to roll the sushi tightly. Wet the border of the nori with water to seal the roll. 8. Repeat with the remaining ingredients. 9. To make the dipping sauce, mix together the soy sauce and wasabi paste in a small bowl. 10. Slice the sushi rolls and serve with the dipping sauce.
