Ingredients

  • 2 lbs. yautia (taro root)
  • 2 lbs. green bananas
  • 1 lb. yuca (cassava root)
  • 2 tbsp. achiote oil
  • 2 tbsp. sofrito
  • 1 1/2 tsp. salt
  • 2 lbs. pork shoulder, cut into small pieces
  • 1/4 cup tomato sauce
  • 1/4 cup olives, chopped
  • 1/4 cup capers
  • 2 tbsp. raisins
  • 2 tbsp. chopped cilantro
  • 20 banana leaves, cut into 12-inch squares

Equipment

  • Grater
  • Food processor
  • Large pot
  • String or twine

Method

  1. Peel and grate the yautia, green bananas, and yuca.
  2. In a large pot, heat the achiote oil and sofrito over medium heat for 2 to 3 minutes.
  3. Add the pork shoulder and tomato sauce and cook for 10 minutes, stirring occasionally.
  4. Add the olives, capers, raisins, and cilantro and cook for an additional 5 minutes.
  5. Add the grated vegetables and salt to the pot and stir well to combine.
  6. Take a banana leaf square and place 1/4 cup of the mixture in the center.
  7. Fold the leaf over the mixture and wrap it tightly, using string to tie the ends together.
  8. Place the wrapped pasteles in a large pot of boiling water and cook for 1 hour.
  9. Remove from the pot and allow to cool for a few minutes before serving.
  10. Unwrap and enjoy!

Notes

  • It is recommended to use gloves when handling the achiote oil, as it can stain your hands.
  • If you can't find banana leaves, you can use parchment paper instead.
  • These pasteles can be frozen for up to 6 months.
