- 3 cups of white rice
- 1 can of tomato paste
- 1 onion, diced

- 1 tablespoon of paprika
- 4 cups of water
- 2 tablespoons of vegetable oil
- Salt and pepper to taste

- A wooden spoon
- A sharp knife
- A cutting board
Method
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the diced onions, green bell pepper, and red bell pepper to the pot and sauté for 5 minutes until they are softened.
- Add the minced garlic to the pot and sauté for an additional minute.
- Add the tomato paste, thyme, curry powder, and paprika to the pot and stir until the vegetables are coated in the spices.
- Add the rice to the pot and stir until it is well coated in the tomato paste and spices.
- Add 4 cups of water to the pot and stir well.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer the rice for 30-35 minutes until it is fully cooked and the liquid has been absorbed.
- Remove the pot from the heat and let it sit for 5 minutes before fluffing the rice with a fork.
- Serve hot with fried plantains and coleslaw.
