- 1 cup brown rice
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced

- 1 green bell pepper, chopped
- 1 cup chopped celery
- 1 cup chopped mushrooms
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Method
- Rinse the brown rice and add it to a large pot with 2 cups of water. Bring to a boil, then reduce heat to low and cover. Simmer for 40-45 minutes, or until the rice is tender.
