Method

  1. Rinse the rice in a fine-mesh strainer and set aside.

  7. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  8. Simmer the rice for 18-20 minutes, or until the liquid has been absorbed and the rice is cooked through.
  9. Remove the pot from the heat and add the chopped spinach to the pot.
  10. Stir the spinach into the rice until it has wilted.
  11. Fluff the rice with a fork and serve hot.

Notes
